On the lemon trees, small trees whose flowers with white petals are very fragrant, grow ovoid fruits. Their rind contains the zest that is as bitter as it is aromatic. The essence of Citron with a lively, tangy flavor, slightly rough, is obtained by expressing the zest, that is, recovering the oil contained in its rind.
